Fish & Rice with Black Bean Salsa
Burger Buns (Toasted)
Fish (1 Pound)
1 T Lime Juice
1 Pack Taco Mix
1/4 T Olive Oil
1/2 C Water
16 Oz. Prepared Salsa
1 Can Black Beans, Rinsed And Drained
1 Can Cooked Corn
Marinate fish 16 hours, refrigerated.
Drain, cook in pan over medium heat until done, or broil if you wish. Cook rice, add salsa, beans, and drained corn.
Mix thoroughly. Serve with rice, top with fish then rest of mixture.
Serves 6.

1 lb. ground beef
4 T. Barbecue Sauce
4 T. Worcestershire
Mix meat and sauces, add salt and pepper to taste. Shape into four patties, fry over medium heat until done but not dried.
Place buns in pan flat side until lightly toasted.
This simple easy to prepare dish gets better with condiments of your choice or a healthy, delicious salsa.
